As we
have already underlined in other pages ours system
of workmanship is still that of
type tradizionale,basato that is on the cold squeezing
and on the use of the pan mills.
Cold squeezing,
is only for extra virgin oil made at a temperature
under 27 grades centigrade by the mechanical squeezing
of olives paste, with a traditional extraction
mean.
The pan mills, are
big millstones, usually made of local stones, that
make the mixture of the right size, without raising
the temperature that would damage the high quality
of the oil.
The liquid coming out from the pressing through
the holes of the cilindre is gathered in a container
for the final separation of the oil from impurities,
that is obtained by centrifugation. |
