It is
called olive picking; In the manual picking workers
climb the tree with stairs and pick olives from
the branches with their own fingers or with the
help of special combs. The olives fall in this way
on a net located under the tree. Once olives are
picked from the tree, they are gathered and put
in sacks or large cases. In this way they arrive
at the oil-mill where the traditional working begins
with the pan-mills and cold squeezing.
Manual picking is the way that guarantees the best
quality of olives as it does not damage olives and
trees and therefore also the oils quality. |
